A5 Wagyu beef tenderloin imported from Japan — because Dubai deserves the best of everything — marinated for 48 hours in a Nero d'Avola Sicilian wine reduction and slow-cooked for six hours. Served on a truffle mashed potato bed with reduced meat jus. Ciccio calls it "the pure emotion dish" and serves it only to tables that request it with the right mindset. Assessing the mindset is the maître d's responsibility.
