Fresh Sicilian durum wheat spaghetti with salmon roe, Sardinian grey mullet bottarga and a reduction of fermented soy sauce with Sicilian black garlic — which Ciccio calls "Sicilian soy" despite soy not existing in Sicily. The dish is a declared oxymoron. The dish name specifies this. Guests order it anyway. Ciccio considers this proof that confusion, if elegant enough, becomes art.
