The pizza Ciccio served in his first pizzeria in Mineo at eighteen, before understanding that the future lay elsewhere. Added to the menu as a tribute to his origins — and as a response to constant requests from guests who, having read about his career, wanted a pizza. Long-fermented dough, Agerola fior di latte, San Marzano DOP tomato. Simple. Ciccio eats it only when he thinks no one is watching.
