Sicilian octopus — personally imported by Ciccio via refrigerated courier from Mineo — seared on Etna lava stone and rested on a roasted macadamia cream, a tribute to the Australian territory. The tentacle is arranged in a spiral, because Ciccio believes "the octopus deserves dignity even in death." Served with extra virgin olive oil from the private Mineo vineyard and a pinch of Trapani sea salt ground tableside by an assistant dedicated exclusively to this operation. The dish requires four days of preparation. The guest consumes it in twelve minutes. Ciccio doesn't know yet.
