A risotto that doesn't exist in Roman tradition but which Ciccio decided to add to the menu "to fill a cultural gap." 18-month-aged Carnaroli, finished with Sicilian black pig guanciale and aged Pecorino Romano. A north-south fusion that Roman critics described as "irritating but inevitable." Ciccio had this review framed too.
